After the holidays, I thought probably it is time for something more healthy and light on the heart. The coconut cookies are aromatic and yet they do not add to your post-Christmas guilt. Besides, those cookies are perfect to prepare together with your children!
Ingredients:
2 cups of flour
1 cup coconut butter, at room temperature
1/2 cup of powdered sugar
1/2 cup coconut flakes
1 egg
20 or so raw almonds for decoration
2-3 spoons of powdered sugar for decoration after baking
Preparation:
All ingredients must be at room temperature, especially the coconut butter, so it is softened. Mix the powdered sugar, flour, coconut shavings and butter in a large bowl. Lightly whisk the egg in a separate container, after which add it to the rest of the mixture. Mix it well until the egg is completely absorbed. Cover with plastic foil and place in the fridge for at least 30 minutes.
After cooling the mixture, remove it from the fridge start shaping smooth walnut-size balls. You may ask little helpers to assist you here 🙂 Meanwhile preheat the oven to 350 degrees F (170 C). Prepare baking sheet, cover it with a baking paper and start placing the balls an inch apart from each other. Place an almond on each ball and press down so the nut is well set. Bake for about 10-15 min until golden. Let them cool off a bit and while still warm, roll the cookies in a bowl with the rest of the powdered sugar, while trying to avoid the almond.
Cookies can last for few days at a room temperature. They go well with coffee or hot cocoa. Enjoy!
